I just found this recipe yesterday and tried it out last night. It was so good and it makes a ton. A 1/2 cup to 1 cup of it goes a long way. Add a salad and some green beans and you have a yummy meal.
Ziti Casserole
1 16oz package of ziti pasta
1 egg, lightly beaten
1 15 oz container ricotta cheese
1/2 cup grated parmesan cheese
1 28 oz jar meatless spaghetti sauce
2 cups shredded mozzerella cheese
Cook pasta according to package instructions. In a bowl, combine egg, ricotta, and 1/4 cup parmesan cheese.
Spread 1 cup of sauce in the bottom of a 9x13 pan that has been sprayed with pam. Top with 1/3 of the pasta, 1/2 of ricotta mixture, 2/3 cup mozzerella cheese, 1 TBSP Parmesan, and 1 cup of sauce. Repeat. Sprinkle with 2 TBSP Parmesan cheese. Top with remaining pasta, sauce, and cheeses.
Cover and bake at 375 for 45-50 minutes or until heated through.
